Japanse Eetcultuur
Courseware to complement the lecture on Japanese food culture of Dr. Kasia Cwiertka of Leiden University.

"Japanse Eetcultuur" is an educational package I originally developed with Macromedia Director for Dr. Kasia Cwiertka as a part of the Japanology of the Low Lands - project to complement Kasia's lectures on the Japanese food culture at Leiden University.

Having seen the courseware I made for Willem van Gulik, Kasia contacted me if we could do something similar but different for her lectures too. So we wrote a plan and Kasia contacted Mr. Oshima, the chef of Yamazato, the Japanese restaurant in Hotel Okura in Amsterdam if it would be possible to interview him for the project, but Mr. Oshima, after hearing our plans, invited us to take videos of the preparation in his restaurant one whole afternoon.

In about 3 hours Mr. Oshima took us amongst many more from sushi, sashimi, tenpura, misoshiru and karage to shabushabu, soba, ramen and tsukiyaki. Finally he also took us to the restaurant Sazanka in the Okura Hotel where chef Nonaka explained us everything about the art of teppanyaki.

Several hours of video tapes and many more hours of editing resulted eventually in a visually well documented courseware which was revised for Japanorama in 2006.
